Fishing and cooking both require a fair amount of waiting. Here is FishingVacations.com’s recipe for fish tacos for the lazy angler.
Ingredients:
6 tbsp. extra-virgin olive oil
2 lemons
2 limes
4 tomatos, diced small
2 lb. whitefish
½ tsp. sea salt
1 tsp. black pepper
10 soft small corn tortillas
1 avocado, diced
sour cream
1 cup of cilantro, chopped
1 cup of cheese
4 cups cabbage, finely shredded or chopped
Step 1: Mix lettuce, tomatoes, cilantro, and juice from two limes in a bowl. Set aside the lettuce slaw.
Step 2: In a large bowl, squeeze out the lemons and mix with 2 tbsp. olive oil. Marinate fish for 15 minutes while you take a nap or watch some football.
Step 3: Heat a nonstick skillet over high heat. Remove fish from marinade, and grill the fillets until the flesh is no longer translucent (approximately 5 minutes on each side). Grab the fillets by the sides and be extra careful to not break the fish (or don't). We’ll be flaking the fish in a later step.
Step 4: In a large nonstick skillet, toast the tacos for 30 seconds to 1 minute on each side for extra crispiness. This is an optional step, but it will set apart the flavor of your tacos from regular, restaurant-prepared fish tacos.
Step 5: Flake the fish. Serve on toasted tacos with lettuce slaw, diced avocados, black pepper, sea salt, cheese, and cilantro. Place halved limes on each plate.
